Deviled Eggs
公司CNY前的lunch party,要每人做一款菜一起吃,理論上是要做家鄉菜的,但其實大家都亂來。
我懶,又剛在聖誕前吃過朋友做的 Deviled Eggs,便跟着做了。
做法很簡單,先把雞蛋煮至全熟,剝殼切開一半,把蛋黃拿出來另放備用,便做成很多雞蛋「杯」了。
雞蛋煮熟後放在冷水中浸一會待蛋殼內的薄衣離開蛋白,剝起來便不會黏着了。切一半的時候也可考慮用條紋刀,使雞蛋「杯」更好看。
「杯」中可放的種類很多,可以放酸瓜碎、三文魚(鮭魚)碎、煙肉碎、蝦肉触肉碎甚至魚子醬!豐儉由人,不過最傳統的,也是做節儉的做法,就是把蛋黃放回去。
蛋黃不用加太多,把一半的蛋黃混沙律醬,再加少許橄欖油或牛油,混起來造成醬便行了,然後用小匙羹放回雞蛋「杯」中,最上面加點紅椒粉點綴一下,便成為好看美味,製作又簡單的小食了!如要更好看一點,可用忌廉(奶油)噴嘴使醬料成花紋。
